Recipe Details

Serves: 4–6
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Ingredients

  • 1 wheel brie

  • 1 ripe peach, thinly sliced

  • 2 tablespoons hot honey

  • 1 French baguette, sliced

  • 1 tablespoon fresh basil, roughly torn

  • Flaky salt, for garnish

  • Olive oil, for brushing

Instructions

  1. Heat a grill or grill pan over medium-high heat.

  2. Lightly brush both sides of the brie with olive oil.

  3. Place the brie directly on the grill and cook for about 5 minutes, or until grill marks form.

  4. Carefully flip and grill for another 5 minutes, or until the brie feels soft and slightly squishy when gently pressed. Transfer to a serving board and let rest for 5 minutes.

  5. Meanwhile, add the sliced peaches and hot honey to a small pan over medium heat. Sauté for 5–7 minutes, until the peaches are softened and lightly caramelized.

  6. Spoon the hot honey peaches over the grilled brie. Finish with fresh basil and flaky salt.

  7. Serve immediately with sliced or toasted baguette.

Extra Sharp Tips

  • Make sure the brie is cold before grilling so the rind stays intact while the center becomes soft and gooey. Keep a close eye on it as it cooks, since an extra-soft wheel can begin to split once heated.

THE APPS METHOD

Ambiance

Lean into a breezy summer garden vibe with gingham linens, bud vases filled with fresh flowers, and colorful taper candles.

Presentation

Place the grilled brie in the center of a serving board, then spoon the hot honey peaches directly over the top. Finish with torn basil and flaky salt, and fan baguette slices around the cheese.

Pairings

Pair with a crisp white wine, sparkling wine, or a light rosé. Balance the rich, sweet brie with something salty and savory, like prosciutto-wrapped melon, marinated olives, tomato crostini, or grilled zucchini skewers.

Space

Make this the centerpiece of a casual appetizer spread. Set it out with a few lighter bites around the table so guests can graze, mingle, and come back for more.
